Why Oxidation is a better name than Fermentation in tea processing?
2019 crop of Soft branch Black we were not so satisfied, so we jump that batch last year.
This Spring we back to Buffalo Garden to improve the process of fermentation.
Fermentation method of 2019 v.s. 2020:
Method of 2019
Put the rolled fresh leaves in a small bamboo basket, and cover with a cotton sheet.

Method of 2020:
Leave the rolled fresh leave on the withering trough, turn up and down from time to time.

Reason & Result:
Let’s talk about the result first.
The 2020 crop is much better, for it more even fermentation and activate fruity soup. You even can taste same umami flavor inside!
Now, we have a confident to recommend our Soft branch Black of 2020 crop to every client!
Then, let’s explain the reason behind.
Don’t forget an alternate name of fermentation is Oxidation. According to the result, I am defiantly prefer Oxidation now!
Yes, the key factor is the O2!
With 2020 method, the fresh leaves were completely exposed to the air.
More O2 means more even fermentation, that’s why 2020 crop is better than 2019 crop.
